In a two-quart baking dish combine all ingredients. Cover with the lid or aluminum foil and bake at 350 degrees for 30 minutes. Uncover and bake 45 minutes longer.<br/><br/>Yield: 4 to 6 servings<br/><br/>REFRIGERATOR PICKLES<br/><br/>This recipe is from my late mother.<br/><br/>7 med cucumbers, scrubbed and sliced thin<br/><br/>1 large onion, sliced and separated<br/><br/>1 green bell pepper, diced<br/><br/>1/2 cup salt<br/><br/>Mix the above ingredients together, cover with water, let stand for 2 hours.<br/><br/>1 cup vinegar<br/><br/>2 cups sugar<br/><br/>1 tbsp celery seed<br/><br/>In a medium saucepan, bring the vinegar, sugar, and celery seed to a boil. Turn off heat and allow to cool.<br/><br/>Drain the cucumber mixture, rinse and drain again. Put the cucumber mixture into containers and pour the cooled syrup over them. Refrigerate.<br/><br/>NOTE: This recipe can be diabetic friendly when Splenda is substituted for sugar.<br/><br/>THE LATE JERRY REED&#8217;S MEATLOAF<br/><br/>You may remember Jerry Reed has a country singer or as an actor. I got this recipe years ago on a trip to Nashville, Tennessee.<br/><br/>1 1/2 lbs ground round<br/><br/>1 1/2 cups cornflakes, crushed<br/><br/>1 cup rice, cooked<br/><br/>1 cup onions, chopped<br/><br/>1 cup bell peppers, chopped<br/><br/>1 egg<br/><br/>1 small can tomato sauce<br/><br/>salt and pepper to taste<br/><br/>Mix all ingredients together and place in a loaf pan.
